You don't need a professional oven or exceptional cooking skills to make a delicious and beautiful looking pizza at home. All you need is some time to find the best recipe for you and start experimenting with your baked goods. In fact, a home oven and a pizza steel, stone or baking tray are sufficient. As this type of equipment usually reaches a maximum temperature of 250°C, 300°C in exceptional cases,, thin baking trays are not able to accumulate enough energy to brown the underside of the pizza when dropped from the peel and not burn the top. In the case of chamotte or granite stones, the situation is better because they have enough mass to store a large amount of energy. However, they do not give it off quickly enough. Pizza steel, on the other hand, has a greater mass than popular stones and is also an excellent thermal conductor. Thanks to these two characteristics, a pizza baked on a steel can be ready in 2-2.5 minutes, achieving a parched bottom, juicy toppings and undried edges.
